Instructions
- Combine warm milk, melted butter and sugar
- Sprinkle in yeast and stir through
- Let yeast mixture sit and activate for 10 minutes in a warm place
- Once yeast is activated, add 4 1/4 cups of the flour and mix until combined
- Cover bowl with cling film or a clean dish towel and let prove for one hour. Meanwhile, move on to the filling.
- Combine butter, brown sugar, and cinnamon
- Mix until it is a nice cinnamon-sugary paste
- Once the dough has proofed for an hour, add the last cup of flour, salt, and baking powder and stir together
- Roll dough onto a clean surface with flour and knead for 10 minutes, adding flour as needed. The dough should no longer stick to you or the surface and should bounce back when poked
- Roll the dough into a rectangle that is about 1/2 inch thick
- Spread filling evenly across entire rectangle
- Slowly roll the dough into a cylinder, adjusting as needed
- Cut rolls (dental floss is a good way to help the rolls have a clean cut without being squished)
- Place rolls into a greased pan and cover with a clean dish towel to prove for 35 minutes
- While rolls are proving, preheat oven to 350° F
- Places rolls into oven and bake for 25-30 minutes (move on to icing)
- Combine cream cheese, milk, vanilla, and butter
- Mix until you get a smooth texture
- Gradually add and mix sugar until you get the desired texture
- Wait 10 minutes after rolls come out of oven to ice to prevent the icing from completely melting into the rolls.
